Zubereitung

1. Bake the Crispy Pastry Shards

  1. Preheat your oven to 200°C (180°C fan).
  2. Brush the pastry sheets lightly with 1 tablespoon of neutral oil. Stack them, slice into rustic geometric triangles or shards, and spread in a single layer on a parchment-lined baking sheet.
  3. Bake for 6–8 minutes until deeply golden and shatteringly crisp. Set aside to cool.

2. Prepare the Bright Mint-Coriander Chutney

  1. In a small blender, combine the fresh coriander, mint leaves, garlic clove, finely chopped green chili, 1 tablespoon of lemon juice, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, and 2 tablespoons of cold water.
  2. Blend until smooth and vibrant green. Taste and adjust seasoning with a drop more lemon or salt if needed.

3. Cook the Spiced Smashed Potatoes

  1. Place the potato chunks in a saucepan of salted water, bring to a boil, and simmer until fork-tender (about 12–15 minutes). Drain well.
  2. In a skillet, heat 1 tablespoon of neutral oil over medium heat. Add the cooked potatoes, coarsely crushing them with the back of a wooden spoon or fork.
  3. Sprinkle with the turmeric, 1/2 teaspoon of cumin, and a pinch of salt. Sauté for 4–5 minutes until the edges are golden and lightly crisped. Remove from the pan and keep warm.

4. Simmer the Chickpeas

  1. In the same skillet, heat the remaining 1 tablespoon of oil over medium heat.
  2. Add half of the diced red onion and sauté for 2 minutes until translucent.
  3. Stir in the remaining 1/2 teaspoon cumin, garam masala, chili powder, and a pinch of salt. Cook for 30 seconds until fragrant.
  4. Tip in the drained chickpeas along with 3 tablespoons of water. Simmer gently for 4–5 minutes, lightly mashing a few chickpeas with your spoon to thicken the sauce into a glossy coat.

5. Assemble and Present

  1. In a small bowl, whisk the Greek yogurt with 1/2 teaspoon sugar, a pinch of salt, and a splash of water until smooth and pourable.
  2. Spoon a warm base of spiced crushed potatoes and saucy chickpeas into wide, shallow serving bowls.
  3. Drizzle generously with the seasoned yogurt and the vibrant herb chutney.
  4. Artfully tuck the crisp pastry shards into the warm base so they stand upright.
  5. Finish with the remaining diced red onion and a jewel-like scatter of fresh pomegranate seeds.
