Zubereitung

1. Prepare the Filling

  1. In a large mixing bowl, combine the rinsed black beans, sweetcorn, and finely diced red bell pepper.
  2. Add the diced avocado, olive oil, lime juice, ground cumin, chili powder (or smoked paprika), salt, and black pepper.
  3. Gently fold the mixture together using a spoon, lightly mashing a small portion of the black beans and avocado to help bind the ingredients while keeping texture intact. Taste and adjust salt or lime juice if desired.

2. Warm the Tortillas

  1. Heat a dry frying pan or skillet over medium heat.
  2. Warm each tortilla for about 20 to 30 seconds per side until soft, pliable, and slightly toasted.

3. Assemble and Toast the Wraps

  1. Lay the warm tortillas flat on a clean cutting board.
  2. Divide the black bean and corn filling evenly across the center of each tortilla.
  3. Fold the sides inward over the filling, then roll tightly from bottom to top to seal into neat burritos.
  4. (Optional) Place the rolled wraps seam-side down in the hot dry pan for 1 to 2 minutes per side until crisp and golden brown.
  5. Slice each wrap diagonally in half and serve warm or at room temperature.
