How to make it
1. Chill the Glass
- Place your coupe glass in the freezer for 5 to 10 minutes to chill before serving.
2. Dry Shake
- Add the gin, fresh lemon juice, raspberry syrup, dry vermouth, and egg white (or aquafaba) to a cocktail shaker without any ice.
- Seal tightly and shake vigorously for 10 to 15 seconds to emulsify the egg white and build a rich foam.
3. Wet Shake
- Open the shaker, fill it generously with ice cubes, and seal it once more.
- Shake hard for another 12 to 15 seconds until the outside of the shaker is frosty and thoroughly cold.
4. Strain and Serve
- Double strain the liquid through a fine-mesh sieve directly into your chilled coupe glass to achieve a smooth, uniform foam cap.
- Allow a few seconds for the creamy head to separate cleanly from the pink body.
- Rest the fresh raspberry garnish gently across the rim.
Garnish
Three fresh raspberries skewered on a cocktail pick and rested over the rim of the glass.
Make it alcohol-free
Replace the 50ml London Dry gin with 50ml non-alcoholic distilled spirit (such as Seedlip Spice 94 or Fluère) and the 15ml dry vermouth with 15ml non-alcoholic white aperitif or cold-brewed white tea.
