How to make it

Prep the Glass

  1. Place your martini glass in the freezer for 10 minutes beforehand, or fill it with ice and cold tap water while you work so it gets thoroughly frosty.

Stir and Chill

  1. Add the London Dry gin and dry vermouth to a mixing glass or heavy-bottomed tumbler.
  2. Fill the mixing glass three-quarters full with fresh ice cubes.
  3. Stir smoothly with a long spoon for about 30 seconds until the outside of the vessel turns cold and beads with frost.

Pour and Serve

  1. Dump the chilling ice from your serving glass if you used water, then strain the cocktail into the cold glass using a strainer (or the rim of a slotted spoon).

Garnish

Express the essential oils from a strip of lemon peel over the top of the drink by pinching it skin-side down, rub the rim gently with the peel, and drop it into the glass.

Make it alcohol-free

Swap the gin for 60 ml of a botanical non-alcoholic spirit (such as Seedlip Spice 94 or Tanqueray 0.0%) and substitute the vermouth with 10 ml of a non-alcoholic white aperitif or chilled diluted white verjus.
