How to make it
Warm the Glass
- Fill your glass mug with boiling water to preheat it for 30 seconds, then discard the water.
Mix the Base
- Add the brown sugar or syrup directly into the warm glass.
- Pour in the hot coffee and the aged genever, stirring thoroughly until the sugar completely dissolves.
Float the Cream
- Turn a regular spoon upside down over the top of the coffee, holding the tip just at the surface of the liquid.
- Gently pour the lightly whipped cream over the back of the spoon so it settles into a smooth, floating layer on top.
Garnish
Dust the cream cap lightly with speculaas spice.
Make it alcohol-free
Replace the aged genever with a non-alcoholic dark spirit alternative, or omit the alcohol entirely and add 1/4 teaspoon of pure vanilla extract.
