How to make it
Step 1: Prepare the Earl Grey Syrup
- Steep the Earl Grey tea bag in 30ml of freshly boiled water for 5 minutes to create a highly concentrated tea.
- Remove the tea bag, squeezing it gently to extract all the flavor.
- Add the white sugar to the hot tea and stir thoroughly until completely dissolved. Allow the syrup to cool down.
Step 2: Shake and Chill
- Pour the gin, fresh lemon juice, and 20ml of your homemade Earl Grey syrup into a cocktail shaker.
- Fill the shaker with ice cubes, seal it, and shake vigorously for about 10 to 15 seconds until the outside of the shaker feels frost-cold.
Step 3: Pour and Top Up
- Fill your highball glass with fresh ice cubes.
- Strain the shaken mixture into the glass.
- Top up slowly with soda water, allowing the carbonation to create a light, fizzy head.
Garnish
A twist of fresh lemon peel expressed over the glass and dropped in.
Make it alcohol-free
Swap the London Dry Gin for 50ml of a non-alcoholic botanical gin alternative (such as Seedlip, Fluère, or similar alcohol-free spirits widely available in Dutch stores).
