How to make it

Step 1: Prepare the Earl Grey Syrup

  1. Steep the Earl Grey tea bag in 30ml of freshly boiled water for 5 minutes to create a highly concentrated tea.
  2. Remove the tea bag, squeezing it gently to extract all the flavor.
  3. Add the white sugar to the hot tea and stir thoroughly until completely dissolved. Allow the syrup to cool down.

Step 2: Shake and Chill

  1. Pour the gin, fresh lemon juice, and 20ml of your homemade Earl Grey syrup into a cocktail shaker.
  2. Fill the shaker with ice cubes, seal it, and shake vigorously for about 10 to 15 seconds until the outside of the shaker feels frost-cold.

Step 3: Pour and Top Up

  1. Fill your highball glass with fresh ice cubes.
  2. Strain the shaken mixture into the glass.
  3. Top up slowly with soda water, allowing the carbonation to create a light, fizzy head.

Garnish

A twist of fresh lemon peel expressed over the glass and dropped in.

Make it alcohol-free

Swap the London Dry Gin for 50ml of a non-alcoholic botanical gin alternative (such as Seedlip, Fluère, or similar alcohol-free spirits widely available in Dutch stores).
