How to make it
Prepare the Glass
- Use a vegetable peeler to shave a long, thin ribbon from a fresh cucumber.
- Spiral the cucumber ribbon along the inner wall of the highball glass, then fill the glass completely with ice cubes to hold it in place.
Build the Drink
- Pour the dry gin, elderflower cordial, and fresh lime juice directly over the ice.
- Top slowly with the chilled club soda to preserve carbonation.
- Give the drink a gentle, single upward stir with a long spoon to combine the layers without knocking out the fizz.
Garnish and Serve
- Slap the mint sprig against the back of your hand to release its aromatic oils, then tuck it into the top of the glass next to the ice.
Garnish
A spiraled cucumber ribbon inside the glass and a freshly clapped mint sprig on top.
Make it alcohol-free
Replace the dry gin with 50ml of a distilled non-alcoholic botanical spirit (such as Seedlip Spice 94 or Tanqueray 0.0) or simply use an extra 50ml of chilled sparkling water.
