How to make it

Prepare the Base

  1. Drop the fresh mint leaves into a cocktail shaker.
  2. Add the lime juice and simple syrup, then press the mint very gently with a muddler (or the back of a spoon) just to release its aromatic oils without tearing the leaves.

Shake and Chill

  1. Pour in the London Dry gin and pastis.
  2. Fill the shaker generously with ice cubes, seal tightly, and shake vigorously for 10 to 12 seconds until thoroughly chilled and frosty on the outside.

Strain and Serve

  1. Double strain through a fine-mesh strainer into a chilled coupe glass to catch any tiny ice shards and mint fragments.

Garnish

A single fresh mint leaf placed gently floating in the center of the drink, or a small mint sprig spanked and clipped to the rim.

Make it alcohol-free

Replace the 60ml gin with 60ml non-alcoholic botanical gin alternative (such as Seedlip Spice 94 or Gordon's 0.0%) and swap the 7.5ml pastis for 7.5ml anise-infused simple syrup or 2 dashes of alcohol-free anise extract.
