How to make it

1. Brew and Sweeten

  1. Place the forest fruit tea bag in a heatproof jug or mug and pour over 150ml of boiling water.
  2. Allow the tea to steep for 5 to 6 minutes to achieve a bold, fruity concentrate.
  3. Remove the tea bag, stir in 15ml of honey until completely dissolved, and let the infusion cool to room temperature (or chill in the fridge for 15 minutes).

2. Muddle and Assemble

  1. In the base of a highball glass, gently press 30g of mixed forest berries with 15ml of freshly squeezed lemon juice using a muddler or the back of a spoon to release their juices.
  2. Fill the glass generously with ice cubes.

3. Pour and Finish

  1. Pour the chilled berry tea over the ice.
  2. Top with 60ml of sparkling water and give it a brief, gentle stir with a bar spoon to combine without losing the effervescence.
  3. Clap the rosemary sprig between your palms to release its oils and tuck it into the top alongside a few whole berries.

Garnish

A lightly bruised fresh rosemary sprig and a couple of whole fresh berries resting on top of the ice.
