How to make it

1. Chill the Glass

  1. Fill your highball glass generously with fresh ice cubes right up to the brim.

2. Combine and Build

  1. Pour the gin, Campari, fresh lime juice, and simple syrup directly over the ice.
  2. Top the glass with the chilled club soda.

3. Stir and Serve

  1. Using a bar spoon or long spoon, gently lift the ingredients from the bottom once or twice to integrate without knocking out the carbonation.
  2. Nestle your garnish between the ice and the inside of the glass.

Garnish

A fresh orange wheel tucked alongside the rim, plus an optional sprig of fresh mint slapped to release its oils.

Make it alcohol-free

Swap the London Dry gin for 35ml of a botanical non-alcoholic spirit (such as Seedlip Spice 94 or Tanqueray 0.0), and replace the Campari with 25ml of a non-alcoholic Italian red aperitivo (such as Lyre's Italian Orange or Giffard Aperitif). Keep the lime juice, syrup, and soda exactly as written.
