How to make it

1. Muddle & Shake

  1. Strip a few leaves from one sprig of fresh rosemary and drop them directly into a cocktail shaker (or a clean jam jar with a lid).
  2. Add the freshly squeezed lime juice and simple syrup, then press the rosemary leaves gently a couple of times with the back of a spoon to release their fragrant herbal oils.
  3. Pour in the gin and fill the shaker generously with ice cubes.
  4. Seal tightly and shake vigorously for about 12 to 15 seconds until the outside feels thoroughly chilled and frosty.

2. Strain & Serve

  1. Strain the liquid through a fine-mesh tea strainer into a chilled coupe glass to catch the ice shards and broken rosemary bits.
  2. Garnish by clapping a fresh rosemary sprig between your palms to awaken its scent, then rest it neatly across the rim.

Make it alcohol-free

Replace the gin with 45ml of a non-alcoholic botanical spirit like Seedlip Spice 94 or Tanqueray 0.0%.
