How to make it
Build the drink
- Fill your highball glass to the top with ice cubes.
- Pour the gin and fresh lime juice over the ice.
- Top up the glass with cold sparkling soda water.
- Stir briefly and gently from the bottom to combine without losing the carbonation.
Garnish
A fresh lime wheel placed on top of the ice.
Make it alcohol-free
Replace the London dry gin with a non-alcoholic botanical spirit such as Seedlip Spice 94 or Fluère.
