How to make it

1. Muddle the Berries

  1. Drop the fresh raspberries into the base of your highball glass.
  2. Add the freshly squeezed lemon juice and simple syrup.
  3. Gently press the berries with the back of a spoon or a muddler just enough to release their juices and vibrant color.

2. Build the Drink

  1. Pour in the dry gin.
  2. Fill the glass to the brim with ice cubes.
  3. Top with sparkling water and give a gentle lift with a long spoon to mix the flavors without knocking out the fizz.

3. Garnish and Serve

  1. Tuck a lemon wheel down against the inside of the glass.
  2. Slap the mint sprig between your palms to wake up the aromatics and perch it on top.

Garnish

A fresh lemon wheel tucked against the glass and a spanked sprig of fresh mint resting over the ice.

Make it alcohol-free

Replace the dry gin with 45ml of a non-alcoholic botanical spirit (such as Seedlip Grove 42 or Gordon's 0.0%).
