How to make it

Prepare the Base

  1. Drop the fresh mint leaves into the bottom of a highball glass.
  2. Add the lime juice and simple syrup, then lightly press the mint with a spoon or muddler just to release its fragrant oils without tearing the leaves.

Build the Drink

  1. Fill the glass completely with ice cubes.
  2. Pour over the gin, then top with equal parts soda water and ginger ale.
  3. Gently stir from the bottom up to integrate the flavors and lift a few mint leaves through the ice.

Garnish & Serve

  1. Top with a fresh mint sprig and a lime wheel.

A fresh mint sprig (clapped to release aroma) and a round slice of lime tucked against the ice.

Make it alcohol-free

Swap the 45ml London Dry gin for 45ml of a non-alcoholic distilled spirit (such as Seedlip Spice 94 or Gordon's 0.0%).
