How to make it

1. Brew the Tea Base

  1. Combine the loose-leaf oolong tea and 150ml cold filtered water in a small jar or bottle.
  2. Seal tightly and refrigerate for 8 to 12 hours (or overnight) to slowly cold brew. Strain out the leaves.

2. Mix and Sweeten

  1. In the bottom of a mixing glass, stir the orange blossom honey together with the lemon juice, mandarin juice, and 2 drops of orange blossom water until the honey dissolves completely.
  2. Pour in 120ml of the cold-brewed oolong tea and stir to combine.

3. Assemble and Serve

  1. Fill a tall highball glass to the brim with fresh ice cubes.
  2. Pour the tea and citrus mixture over the ice.
  3. Top up with 75ml chilled sparkling water and give one gentle lift with a bar spoon to integrate the bubbles.
  4. Slide a fresh orange wheel alongside the ice and finish with a fresh mint sprig.

Garnish

A thinly sliced orange wheel tucked into the glass and a lightly clapped sprig of fresh mint resting on top.
