Pink Grapefruit Gin Highball

Build the Drink

1. Fill a tall highball glass to the brim with solid ice cubes.
2. Pour 50ml London Dry gin, 50ml freshly squeezed pink grapefruit juice, and 15ml simple syrup directly over the ice.
3. Top with 100ml chilled soda water.
4. Slide a bar spoon down the inside of the glass and gently lift once from the bottom to integrate without losing the fizz.

Garnish & Serve

5. Slip a pink grapefruit half-wheel down between the ice and the inside of the glass, then lightly slap a sprig of rosemary against your palm and tuck it at the top.
