How to make it
1. Muddle the Base
- Add the fresh mint leaves and honey to the base of your julep cup or rocks glass.
- Gently press the mint with a muddler or the back of a spoon to release its aromatic oils without tearing the leaves.
2. Combine and Chill
- Pour in the bourbon and chilled rooibos tea.
- Fill the glass halfway with crushed ice and stir briskly for about 15 seconds until the outside of the cup turns frosty.
3. Pack and Finish
- Mound more crushed ice over the top until it forms a neat dome.
- Garnish with a generous fresh mint sprig and serve immediately.
Garnish
A lush sprig of fresh mint, lightly slapped to release the oils, tucked neatly into the crushed ice beside the straw.
Make it alcohol-free
Replace the bourbon with 60ml of non-alcoholic bourbon alternative (such as Lyre's Traditional Reserve) or simply increase the chilled rooibos tea to 90ml with an extra dash of vanilla extract.
