How to make it

1. Extract the Herbaceous Aromatics

  1. Drop the 4 sage leaves and 20ml simple syrup into the base of a cocktail shaker.
  2. Press gently with a muddler 3 to 4 times to bruise the leaves and release their natural oils without shredding them into bitter flecks.

2. Chill and Integrate

  1. Pour in 30ml freshly squeezed lemon juice.
  2. Add a scoop of ice cubes, cap the shaker firmly, and shake briskly for about 10 seconds until well chilled.

3. Build and Top Up

  1. Fill your highball glass to the brim with fresh ice.
