How to make it

Chill the Glass

  1. Fill a rocks glass with ice water and let it sit to thoroughly chill.

Build and Stir

  1. In a separate mixing glass, place the sugar cube, moisten it with the Peychaud's bitters, Angostura bitters, and 5ml of cold water, then muddle until completely dissolved.
  2. Pour in the rye whiskey and fill the mixing glass halfway with ice cubes.
  3. Stir smoothly for about 25–30 seconds until the liquid is well-chilled and properly diluted.

Coat the Glass and Serve

  1. Discard the ice water from your prepared rocks glass. Pour in the absinthe and swirl it around until the entire inside surface is coated, then dump out any excess.
  2. Strain the mixed whiskey directly into the absinthe-rinsed glass without ice.
  3. Express the oils from the lemon peel over the top of the drink and around the rim, then discard the peel (or drop it in, according to preference).

Garnish

Expressed lemon peel oils over the surface (traditionally discarded, or lightly set across the rim)

Make it alcohol-free

Swap the rye whiskey for 60ml of a non-alcoholic dark spirit alternative (such as Lyre's American Malt), replace the absinthe rinse with a barspoon of aniseed-infused simple syrup, and use non-alcoholic aromatic and Creole bitters.
