How to make it

1. Chill the Glass

  1. Fill a tall highball or hurricane glass with fresh ice cubes and set aside.

2. Shake

  1. Add the gin, Cherry Heering, Cointreau, Bénédictine, grenadine, lime juice, pineapple juice, and Angostura bitters into a cocktail shaker.
  2. Fill the shaker with plenty of ice cubes.
  3. Seal firmly and shake vigorously for 10 to 12 seconds until well-chilled and a thick, frothy head forms from the pineapple juice.

3. Strain and Top

  1. Strain the frothy mixture into the ice-filled glass.
  2. Gently top with a quick splash of chilled club soda.
  3. Finish by perching the pineapple wedge and cherry on the rim and serve immediately with a straw.

Garnish

A fresh pineapple triangle and a maraschino or cocktail cherry skewered together on the rim.

Make it alcohol-free

Replace the gin with a non-alcoholic botanical spirit (such as Gordon's 0.0 or Seedlip Spice 94), swap the Cherry Heering for sour cherry juice, use an alcohol-free orange sec or a dash of orange blossom water for Cointreau, and replace the Bénédictine and bitters with a splash of spiced herbal tea or non-alcoholic aromatic bitters.
