How to make it
1. Prepare the Glass
- Fill a highball glass to the brim with fresh ice cubes.
2. Pour and Mix
- Add the dry gin, freshly squeezed lemon juice, orange juice, and simple syrup directly over the ice.
- Stir gently with a long spoon for 5 seconds to combine and chill the base.
3. Top and Finish
- Top up with the chilled club soda.
- Give one gentle lift with your spoon from the bottom to integrate without losing carbonation.
- Tuck the lemon wheel against the side of the glass and top with the mint sprig.
Garnish
A thin wheel of fresh lemon and a lightly slapped mint sprig.
Make it alcohol-free
Replace the dry gin with 40ml of an alcohol-free botanical spirit (such as Seedlip Grove 42 or Fluère Original).
