How to make it

1. Chill the Glass

  1. Place your coupe glass in the freezer for 5 to 10 minutes to chill thoroughly.

2. Dry Shake

  1. Add the London Dry gin, triple sec, fresh lemon juice, simple syrup, and egg white into a cocktail shaker without ice.
  2. Seal the shaker tightly and shake vigorously for 10 to 15 seconds to emulsify the egg white and build a fine foam.

3. Wet Shake

  1. Open the shaker and fill it generously with ice cubes.
  2. Seal again and shake hard for another 12 to 15 seconds until the tin is frosty cold.

4. Strain and Serve

  1. Double strain the liquid through a fine-mesh Hawthorne strainer into your chilled coupe glass.
  2. Let the dense, velvety foam settle on top for a few seconds.
  3. Express the essential oils from the lemon peel over the surface, then drop the twist in or notch it onto the rim.

Make it alcohol-free

Replace the London Dry gin with 50ml of non-alcoholic botanical gin alternative (such as Seedlip Grove 42 or Gordon's 0.0%) and swap the triple sec for 25ml of non-alcoholic triple sec syrup or fresh orange juice mixed with a dash of orange blossom water.
