Method
Preparation
- Preheat your oven to 180°C (350°F / fan 160°C). Grease an 8-inch (20cm) square or round baking dish with a tiny touch of butter or oil.
- Set aside about a quarter of the diced apples and a handful of chopped nuts for the topping.
Mix the Batter
- In a medium mixing bowl, stir together the rolled oats, ground cinnamon, baking powder, and salt.
- In a separate bowl or measuring jug, whisk the egg, milk, maple syrup (or honey), vanilla extract, and melted butter until thoroughly combined.
- Pour the wet mixture over the dry oats and stir until evenly combined, then fold in the remaining diced apples.
Assemble and Bake
- Transfer the oat mixture into your prepared baking dish, smoothing out the surface.
- Scatter the reserved diced apples and chopped nuts across the top, pressing them gently into the surface.
- Bake in the oven for 25–30 minutes, until the top is set, lightly puffed, and golden brown around the edges.
Serve
- Remove from the oven and let rest for 5 minutes to set.
- Spoon warm portions into shallow bowls, topped with an extra dusting of cinnamon, a drizzle of honey, and a spoonful of Greek yogurt if desired.
