Method

Preparation

  1. Preheat your oven to 180°C (350°F / fan 160°C). Grease an 8-inch (20cm) square or round baking dish with a tiny touch of butter or oil.
  2. Set aside about a quarter of the diced apples and a handful of chopped nuts for the topping.

Mix the Batter

  1. In a medium mixing bowl, stir together the rolled oats, ground cinnamon, baking powder, and salt.
  2. In a separate bowl or measuring jug, whisk the egg, milk, maple syrup (or honey), vanilla extract, and melted butter until thoroughly combined.
  3. Pour the wet mixture over the dry oats and stir until evenly combined, then fold in the remaining diced apples.

Assemble and Bake

  1. Transfer the oat mixture into your prepared baking dish, smoothing out the surface.
  2. Scatter the reserved diced apples and chopped nuts across the top, pressing them gently into the surface.
  3. Bake in the oven for 25–30 minutes, until the top is set, lightly puffed, and golden brown around the edges.

Serve

  1. Remove from the oven and let rest for 5 minutes to set.
  2. Spoon warm portions into shallow bowls, topped with an extra dusting of cinnamon, a drizzle of honey, and a spoonful of Greek yogurt if desired.
