Creamy Polenta Bowls with Balsamic Roasted Root Vegetables, Crispy Chickpeas, and Whipped Ricotta

Method

1. Roast the Roots and Crispy Chickpeas

  1. Preheat your oven to 400°F (200°C) and line two large rimmed baking sheets with parchment paper.
  2. In a bowl, toss the prepared carrots and parsnips with 1 tablespoon of olive oil, picked fresh thyme leaves, salt, and black pepper. Scatter them across one side of the first baking sheet.
  3. In the same bowl, toss the beet wedges with 1 tablespoon of olive oil, salt, and pepper, then spread them on the other side of the tray (keeping them slightly separated keeps the beets from turning the carrots completely magenta).
  4. Toss the thoroughly dried chickpeas with 1 tablespoon of olive oil, garlic powder, salt, and cracked black pepper. Spread them out in a single layer on the second baking sheet.
  5. Transfer both sheets to the oven. Roast for 30–35 minutes, shaking the pans halfway through. The root vegetables should be fork-tender with blistered, caramelized edges, and the chickpeas should be deeply golden and crisp.
  6. As soon as the root vegetables emerge from the oven, immediately drizzle them with 2 tablespoons of balsamic glaze and toss gently so the sweet, tangy glaze coats them while hot.

2. Toast the Pine Nuts

  1. While the vegetables roast, set a small dry skillet over medium-low heat.
  2. Add the pine nuts and toast for 3 to 4 minutes, swirling constantly until fragrant and pale golden. Transfer immediately to a small plate so they don't burn.

3. Prepare the Whipped Ricotta

  1. In a small food processor or using an immersion blender (or a vigorous hand whisk), combine the ricotta cheese with 1 tablespoon of olive oil, a pinch of salt, and a crack of black pepper.
  2. Blend for 1 to 2 minutes until glossy, ultra-smooth, and airy. Set aside at room temperature.

4. Cook the Silky Polenta

  1. In a medium heavy-bottomed saucepan, bring the vegetable broth and whole milk to a gentle simmer over medium heat with a pinch of salt.
  2. Reduce the heat to low. While whisking constantly, slowly pour in the cornmeal in a steady stream to prevent lumps from forming.
  3. Switch to a wooden spoon or silicone spatula. Cook the polenta over low heat, stirring frequently, for 20 to 25 minutes until the grains are tender, thick, and velvety. (If it gets too thick before softening, splash in a little extra warm water or broth).
  4. Remove from heat and stir in the butter and finely grated Parmesan cheese until completely melted and rich. Season with salt and black pepper to taste.

5. Plate and Serve

  1. Spoon generous, warm ladles of creamy polenta into wide, shallow bowls, using the back of a spoon to create a soft swirl with a shallow well in the center.
  2. Dollop a generous scoop of whipped ricotta into the center of each bowl.
  3. Arrange the warm, glazed balsamic root vegetables and crispy chickpeas over and around the ricotta.
  4. Scatter the toasted pine nuts and fresh microgreens over top.
  5. Finish with a final delicate drizzle of balsamic glaze and a turn of freshly cracked black pepper. Serve warm immediately.
