Crispy Black Bean Burgers with Simple Slaw

Method

1. Prepare the Slaw

  1. In a medium bowl, combine the mayonnaise, vinegar, a pinch of salt, and a pinch of black pepper.
  2. Add the shredded cabbage and toss well until evenly coated. Set aside in the fridge to let the flavours meld while you prepare the burgers.

2. Make the Bean Patties

  1. Tip the drained black beans onto a plate or into a wide mixing bowl and lightly pat dry with a paper towel.
  2. Mash the beans with a fork or potato masher, leaving about a quarter of them intact for texture.
  3. Add the breadcrumbs, egg, ground cumin, garlic powder, 1/2 teaspoon of salt, and a generous crack of black pepper. Mix thoroughly until the mixture binds together.
  4. Shape the mixture into two equal patties, roughly the diameter of your burger buns.

3. Pan-Fry the Burgers

  1. Heat the cooking oil in a non-stick frying pan over medium heat.
  2. Carefully place the patties into the pan and cook for 4 to 5 minutes on the first side without moving them, until deeply browned and crisp.
  3. Gently flip the patties and cook for another 4 to 5 minutes until crispy and heated through. Transfer to a plate.

4. Toast and Assemble

  1. In the same warm pan, lightly toast the cut sides of the burger buns for 1 minute until golden.
  2. Place a crispy black bean patty on each bottom bun, pile a generous mound of the crunchy slaw on top, cover with the top bun, and serve immediately.
