Method
1. Mix the Base
- In a medium bowl or wide-mouth glass jar, combine the rolled oats, chia seeds, ground cinnamon, and a tiny pinch of salt.
- Pour in the plant-based milk, maple syrup, and vanilla extract.
- Stir thoroughly with a spoon, ensuring no chia seeds or dry oat clumps stick to the bottom or sides of the container.
2. Chill Overnight
- Cover the bowl or screw the lid onto the jar securely.
- Place in the refrigerator for at least 4 hours, but ideally overnight, allowing the oats and chia seeds to absorb the liquid and thicken into a creamy, pudding-like consistency.
3. Toast the Almonds
- Place a small dry skillet over medium-low heat.
- Add the flaked almonds and toast for 2 to 3 minutes, tossing constantly, until fragrant and lightly golden.
- Immediately transfer the almonds to a plate to prevent them from burning, and let them cool completely.
4. Assemble and Serve
- Give the chilled oats a good stir. If the texture is thicker than you like, splash in an extra tablespoon or two of plant milk.
- Spoon the oats into two serving bowls or keep them in the jar for on-the-go breakfast.
- Top generously with the fresh berries, toasted flaked almonds, and a drizzle of almond butter if using. Serve cold.
