Method

1. Mix the Base

  1. In a medium bowl or wide-mouth glass jar, combine the rolled oats, chia seeds, ground cinnamon, and a tiny pinch of salt.
  2. Pour in the plant-based milk, maple syrup, and vanilla extract.
  3. Stir thoroughly with a spoon, ensuring no chia seeds or dry oat clumps stick to the bottom or sides of the container.

2. Chill Overnight

  1. Cover the bowl or screw the lid onto the jar securely.
  2. Place in the refrigerator for at least 4 hours, but ideally overnight, allowing the oats and chia seeds to absorb the liquid and thicken into a creamy, pudding-like consistency.

3. Toast the Almonds

  1. Place a small dry skillet over medium-low heat.
  2. Add the flaked almonds and toast for 2 to 3 minutes, tossing constantly, until fragrant and lightly golden.
  3. Immediately transfer the almonds to a plate to prevent them from burning, and let them cool completely.

4. Assemble and Serve

  1. Give the chilled oats a good stir. If the texture is thicker than you like, splash in an extra tablespoon or two of plant milk.
  2. Spoon the oats into two serving bowls or keep them in the jar for on-the-go breakfast.
  3. Top generously with the fresh berries, toasted flaked almonds, and a drizzle of almond butter if using. Serve cold.
