Pan-Seared Duck Breast with Orange Glaze and Sautéed Green Beans

Method
1. Prep the Duck
- Pat the duck breasts dry with paper towels. Using a sharp knife, score the skin in a fine crosshatch pattern, cutting just through the fat without piercing the meat beneath.
- Season both sides generously with salt and black pepper.
2. Sear the Duck Breasts
- Place the duck breasts skin-side down in a cold, unheated skillet over medium-low heat.
- Allow the fat to slowly render out and the skin to turn deeply golden and crisp, about 8 to 10 minutes. Pour off excess rendered duck fat periodically into a small heatproof bowl (reserve 1 tablespoon for the beans).
- Flip the breasts over and cook meat-side down for 3 to 4 minutes for a medium-rare finish (around 54°C to 57°C internal temperature).
- Transfer duck breasts to a warm cutting board and let rest loosely tented with foil for 8 to 10 minutes.
3. Make the Orange Glaze
- In the same pan over medium heat (leaving about 1 teaspoon of fat), add the diced shallot and cook until softened, about 1 minute.
- Pour in the orange juice, orange zest, honey, and fresh thyme sprigs. Bring to a rapid simmer, scraping up any browned bits from the pan bottom.
- Let the liquid reduce by roughly half until syrupy and glossy, about 3 to 4 minutes.
- Remove from heat, discard the thyme sprigs, and swirl in 1 tablespoon of cold butter until emulsified. Season with a pinch of salt to balance the sweetness.
4. Sauté the Green Beans
- While the sauce simmers, heat a separate skillet over medium-high heat with 1 tablespoon of the reserved duck fat and 1 tablespoon of butter.
- Add the trimmed green beans and cook for 4 to 5 minutes, tossing frequently until tender-crisp and lightly blistered.
- Add the sliced garlic in the last minute of cooking, stirring continuously until fragrant and lightly golden. Season with salt and pepper.
5. Plate and Serve
- Slice the rested duck breasts diagonally into 1 cm thick pieces.
- Arrange a portion of sautéed green beans on each plate.
- Fan the sliced duck breast alongside the beans and spoon the warm, glossy orange glaze over the meat.
