Method

1. Prep the Tofu

  1. Press the block of tofu firmly between paper towels or a clean kitchen towel to remove excess moisture.
  2. Cut the pressed tofu into bite-sized cubes (about 2 cm).

2. Whisk the Sauce

  1. In a small bowl, whisk together the peanut butter, lime juice, soy sauce, sugar (or maple syrup), and warm water until completely smooth and creamy. If the sauce is too thick, add an extra splash of warm water.

3. Sear the Tofu

  1. Heat 1.5 tablespoons of neutral oil in a large non-stick skillet over medium-high heat.
  2. Add the tofu cubes in a single layer and season with a pinch of salt and pepper.
  3. Fry for 8–10 minutes, flipping occasionally, until all sides are golden brown and crisp. Transfer the tofu to a plate.

4. Cook the Green Beans

  1. Add the remaining 1/2 tablespoon of oil to the same skillet over medium-high heat.
  2. Toss in the green beans along with a pinch of salt. Sauté for 4–5 minutes, stirring often, until lightly blistered yet still tender-crisp. (Add a tablespoon of water and cover with a lid for 1 minute if you prefer them softer).

5. Combine and Serve

  1. Return the crispy tofu to the pan with the green beans.
  2. Pour half of the peanut-lime sauce over the pan, tossing gently off the heat for 30 seconds to coat everything evenly.
  3. Transfer to serving bowls and drizzle the remaining sauce over the top immediately before eating.
