Prosciutto and Melon Skewers with Balsamic Glaze

Method
1. Simmer the Balsamic Glaze
- In a small saucepan over medium heat, combine the balsamic vinegar and honey.
- Bring the mixture to a gentle simmer, then reduce the heat to low. Let it cook uncovered for about 6 to 8 minutes, stirring occasionally, until reduced by half and thick enough to coat the back of a spoon. Remove from heat and allow to cool completely; it will thicken further as it rests.
2. Prepare the Ingredients
- Cut the cantaloupe in half, scoop out and discard the seeds, and use a melon baller to scoop out 12 to 16 melon spheres (alternatively, cut the fruit into bite-sized cubes).
- Slice or gently tear the prosciutto strips lengthwise into manageable ribbons that can be easily folded accordion-style.
- Pat the mini mozzarella balls dry with a clean paper towel to remove excess brine.
3. Assemble the Skewers
- Take a small wooden skewer or cocktail pick and thread one melon ball onto the base.
- Fold a ribbon of prosciutto back and forth into loose folds and slide it onto the skewer next to the melon.
- Thread a fresh basil leaf (folded in half if large) and a mozzarella ball onto the skewer.
- Repeat the process to assemble all skewers, placing them neatly side by side on a serving platter.
4. Finish and Serve
- Lightly brush or drizzle the assembled skewers with extra-virgin olive oil.
- Drizzle the cooled balsamic glaze generously over the top in thin, zigzagging lines.
- Finish with a light pinch of flaky sea salt and freshly cracked black pepper, and serve immediately.
