Method

1. Fast-Track the Congee Base

  1. Place the cooked rice and vegetable stock into a medium pot set over medium-high heat. Bring the mixture to a vigorous boil.
  2. Use a potato masher or an immersion blender pulsed 2–3 times to lightly break down the rice grains. This releases starch instantly and replicates the silky texture of slow-cooked porridge in minutes.
  3. Reduce heat to medium-low. Add half of the minced ginger and the white parts of the sliced scallions. Simmer gently for 15 minutes, stirring occasionally, until thick, creamy, and velvety.

2. Sauté the Savory Mushroom Topping

  1. While the porridge simmers, heat the neutral cooking oil in a non-stick skillet over medium-high heat.
  2. Add the sliced mushrooms in an even layer. Let them sear undisturbed for 2–3 minutes until nicely browned on one side.
  3. Stir in the minced garlic, the remaining julienned ginger, and the fine sea salt. Cook for another 2 minutes until aromatic and tender.
  4. Pour in 1 tablespoon of the soy sauce, tossing quickly to glaze the mushrooms, then remove from the heat.

3. Season and Assemble

  1. Stir the remaining 1/2 tablespoon of soy sauce and a pinch of ground white pepper into the thickened congee. Taste and adjust seasoning with extra salt if desired.
  2. Ladle the hot porridge into wide, shallow bowls.
  3. Crown each portion with the glazed mushrooms and ginger.
  4. Finish with the sliced scallion greens, a generous drizzle of toasted sesame oil, and an extra dusting of white pepper before serving immediately.
