Scandinavian Creamy Mushroom Toast

Method
Toast the Bread
- Melt 1 tablespoon of butter with a light drizzle of oil in a large skillet over medium-high heat.
- Add the bread slices and toast until deeply golden and crisp on both sides, about 2 to 3 minutes per side. Transfer to serving plates.
Sauté the Mushrooms
- Return the skillet to medium-high heat and add the remaining oil.
- Add the torn mushrooms in a single layer and let them sear undisturbed for 3 to 4 minutes until they begin to brown.
- Stir and cook for another 3 to 4 minutes until all the released moisture evaporates and the mushrooms are golden and caramelized.
- Lower the heat to medium, add the remaining 1 tablespoon of butter, diced shallot, and minced garlic. Sauté for 2 minutes until soft and fragrant, taking care not to burn the garlic.
Build the Sauce & Assemble
- Pour in the heavy cream, Dijon mustard, and soy sauce. Stir thoroughly to scrape up any browned bits from the bottom of the pan.
- Simmer gently for 2 to 3 minutes until the cream reduces into a velvety sauce that clings to the mushrooms.
- Remove from the heat and stir in the fresh lemon juice, most of the dill, and most of the chives. Season with salt and plenty of freshly ground black pepper to taste.
- Spoon the creamy mushroom mixture generously over the toasted bread. Scatter the remaining dill and chives on top and serve immediately.
