Sicilian Eggplant Caponata with Crusty Bread

Method

1. Brown the Eggplant

  1. Heat 3 tablespoons of oil in a wide, heavy-bottomed skillet or Dutch oven over medium-high heat.
  2. Add the diced eggplant in a single layer (working in batches if needed) and cook for 8–10 minutes, turning occasionally, until golden-brown and tender.
  3. Transfer the eggplant to a plate lined with paper towels and season with a pinch of salt.

2. Sauté the Aromatics

  1. Reduce the heat to medium and add the remaining tablespoon of oil to the same pan.
  2. Add the diced red onion and sliced celery. Cook for 6–8 minutes, stirring frequently, until the vegetables soften and the onion turns translucent.
  3. Stir in the halved green olives and cook for another 1–2 minutes.

3. Simmer and Glaze

  1. Pour in the crushed canned tomatoes, sugar, red wine vinegar, 1/2 teaspoon of salt, and black pepper. Stir well to combine.
  2. Return the cooked eggplant to the pan, gently folding it into the sauce.
  3. Lower the heat to medium-low and simmer uncovered for 15–20 minutes, stirring occasionally, until the sauce thickens into a glossy, sweet-and-sour glaze and the vegetables are completely tender.

4. Rest and Serve

  1. Taste and adjust seasoning with an extra splash of vinegar or pinch of salt if needed.
  2. Remove from heat and let the caponata rest for at least 15–20 minutes (it is best served warm or at room temperature so the flavors meld).
  3. Serve in shallow bowls accompanied by thick slices of toasted crusty bread for scooping.
