Sicilian Eggplant Caponata with Crusty Bread

Method
1. Brown the Eggplant
- Heat 3 tablespoons of oil in a wide, heavy-bottomed skillet or Dutch oven over medium-high heat.
- Add the diced eggplant in a single layer (working in batches if needed) and cook for 8–10 minutes, turning occasionally, until golden-brown and tender.
- Transfer the eggplant to a plate lined with paper towels and season with a pinch of salt.
2. Sauté the Aromatics
- Reduce the heat to medium and add the remaining tablespoon of oil to the same pan.
- Add the diced red onion and sliced celery. Cook for 6–8 minutes, stirring frequently, until the vegetables soften and the onion turns translucent.
- Stir in the halved green olives and cook for another 1–2 minutes.
3. Simmer and Glaze
- Pour in the crushed canned tomatoes, sugar, red wine vinegar, 1/2 teaspoon of salt, and black pepper. Stir well to combine.
- Return the cooked eggplant to the pan, gently folding it into the sauce.
- Lower the heat to medium-low and simmer uncovered for 15–20 minutes, stirring occasionally, until the sauce thickens into a glossy, sweet-and-sour glaze and the vegetables are completely tender.
4. Rest and Serve
- Taste and adjust seasoning with an extra splash of vinegar or pinch of salt if needed.
- Remove from heat and let the caponata rest for at least 15–20 minutes (it is best served warm or at room temperature so the flavors meld).
- Serve in shallow bowls accompanied by thick slices of toasted crusty bread for scooping.
