Method
Prepare the Cucumber Base
- Wash the cucumber thoroughly and slice it crosswise into rounds about 1.5 cm thick.
- Lay the rounds flat on a clean paper towel and gently pat the tops dry to remove excess moisture so the topping stays firmly in place.
Mix the Herb Cheese Spread
- In a small bowl, combine the light cream cheese, finely chopped dill, lemon juice, a pinch of salt, and a dash of freshly ground black pepper.
- Mix with a spoon or fork until smooth and well blended.
Assemble the Bites
- Spoon or pipe roughly 1 teaspoon of the seasoned cream cheese onto each cucumber round.
- Gently fold a small strip of smoked salmon into an accordion-style ribbon and set it securely on top of the cream cheese.
- Finish each bite with a small sprig of fresh dill and a light turn of freshly ground black pepper over the platter. Serve immediately, or chill in the fridge for up to 1 hour before serving.
