Method

1. Mix the Base

  1. In a medium mixing bowl or a 500ml glass jar, add the milk, vanilla extract, honey (or maple syrup), and a tiny pinch of salt.
  2. Whisk thoroughly until the sweetener is completely dissolved into the milk.
  3. Add the chia seeds to the liquid and whisk vigorously for about 1 minute so the seeds disperse evenly without clumping at the bottom.

2. Rest and Re-whisk

  1. Let the mixture sit on the counter for 5 to 10 minutes. The seeds will begin to settle and start absorbing the liquid.
  2. Give everything another thorough stir or whisk to break up any pockets of seeds and ensure a smooth, uniform texture.

3. Chill to Set

  1. Cover the bowl or screw the lid onto the jar.
  2. Place in the refrigerator for at least 2 hours, or ideally overnight, until the pudding is thick, creamy, and spoonable.

4. Assemble and Serve

  1. Give the pudding a quick final stir to check the consistency. If it feels too thick, stir in an extra splash of milk.
  2. Divide between serving glasses or bowls.
  3. Top generously with fresh berries and an optional light drizzle of extra honey right before serving.
