Method
1. Prepare and Season
- Preheat your oven to 190°C (170°C fan) and lightly grease an ovenproof baking dish with a tiny touch of butter.
- In a large bowl, whisk together the melted butter, low-carb sweetener, ground cinnamon, nutmeg, ginger, salt, vanilla extract, and lemon juice until blended.
- Add the apple wedges to the bowl and toss thoroughly until every slice is evenly coated in the spiced mixture.
2. Bake
- Arrange the seasoned apple slices in a single, slightly overlapping layer in the prepared baking dish, pouring any remaining spiced glaze from the bowl over the top.
- Bake for 20 to 25 minutes, gently turning the slices halfway through, until they are tender and caramelized around the edges.
3. Toast the Nuts and Assemble
- While the apples bake, toast the chopped pecans in a dry skillet over medium-low heat for 3 to 4 minutes until fragrant, then remove from heat.
- Transfer the warm baked apples to shallow serving bowls, spooning the pan juices over them.
- Top with the toasted nuts and serve warm alongside a spoonful of thick Greek yogurt or crème fraîche.
