Method

1. Prepare and Season

  1. Preheat your oven to 190°C (170°C fan) and lightly grease an ovenproof baking dish with a tiny touch of butter.
  2. In a large bowl, whisk together the melted butter, low-carb sweetener, ground cinnamon, nutmeg, ginger, salt, vanilla extract, and lemon juice until blended.
  3. Add the apple wedges to the bowl and toss thoroughly until every slice is evenly coated in the spiced mixture.

2. Bake

  1. Arrange the seasoned apple slices in a single, slightly overlapping layer in the prepared baking dish, pouring any remaining spiced glaze from the bowl over the top.
  2. Bake for 20 to 25 minutes, gently turning the slices halfway through, until they are tender and caramelized around the edges.

3. Toast the Nuts and Assemble

  1. While the apples bake, toast the chopped pecans in a dry skillet over medium-low heat for 3 to 4 minutes until fragrant, then remove from heat.
  2. Transfer the warm baked apples to shallow serving bowls, spooning the pan juices over them.
  3. Top with the toasted nuts and serve warm alongside a spoonful of thick Greek yogurt or crème fraîche.
