Cómo prepararlo

Combine the Base

  1. In the bottom of a highball glass, add the honey and fresh lemon juice, stirring briefly with a spoon until the honey dissolves.
  2. Pour in the peach liqueur and chilled rooibos tea, giving it another quick stir.

Chill and Top Up

  1. Fill the glass to the top with ice cubes.
  2. Gently pour over the sparkling water to keep the fizz lively.

Garnish and Serve

  1. Slide the peach slices down the inside of the glass and tuck a fresh thyme sprig into the top alongside the ice.

Decoración

A sprig of fresh thyme and two thin peach slices tucked beside the ice.

Hazlo sin alcohol

Replace the 40ml peach liqueur with 40ml white peach nectar or purée, and reduce the honey to 5ml.
