Preparación
1. Caramelize the Shallots
- Set a wide skillet over medium-low heat and melt the butter together with the olive oil.
- Add the sliced shallots along with 1/4 teaspoon of the salt. Stir thoroughly to coat each slice in the fat.
- Cook low and slow for 20 to 25 minutes, stirring occasionally, until the shallots turn soft, translucent, and deeply golden-brown.
- Stir in the balsamic vinegar and fresh thyme leaves. Cook for another 2 minutes until the liquid reduces into a glossy glaze clinging to the shallots. Remove from heat and allow to cool to room temperature.
2. Prepare the High-Protein Cheese Base
- In a medium bowl, combine the ricotta, egg yolk, remaining 1/4 teaspoon salt, and a pinch of black pepper.
- Whisk vigorously until the ricotta mixture becomes velvety and light. This base boosts the protein content significantly while providing a luscious, silky foundation beneath the goat cheese.
3. Shape and Prep the Pastry
- Preheat your oven to 200°C (400°F / gas mark 6). Line a large baking sheet with parchment paper.
- Unroll the puff pastry sheet onto a lightly floured surface. Cut the sheet into 4 equal rectangles (or rounds if you prefer). Transfer them to the prepared baking sheet, leaving space between each.
- Using the tip of a paring knife, gently score a 1 cm (1/2-inch) border around the perimeter of each tartlet, taking care not to cut all the way through the dough.
- Prick the inside rectangle all over with a fork to prevent the center from puffing up unevenly.
- Brush the raised outer borders with the beaten egg white for a deep golden sheen.
4. Assemble the Tartlets
- Spoon a generous layer of the seasoned ricotta mixture into the center of each tartlet, spreading it evenly out to the scored border.
- Distribute the cooled caramelized shallots evenly over the ricotta bed.
- Top each tartlet with rounds of the fresh goat cheese, arranging them neatly down the center.
- Scatter the chopped walnuts over the shallots and cheese for a nutty crunch.
5. Bake and Finish
- Bake on the middle rack for 18 to 22 minutes, until the pastry edges have puffed dramatically and turned crisp and golden, and the goat cheese is warm with toasted golden spots.
- Remove from the oven and let rest on the baking tray for 3 to 4 minutes to settle.
- Just before serving, drizzle lightly with honey and finish with fresh thyme leaves and cracked black pepper. Serve warm.
