Preparación
1. Build the Aromatic Base
- Heat the olive oil in a wide, heavy-bottomed pot or Dutch oven over medium heat.
- Add the diced onion with a pinch of salt and cook for 5 to 6 minutes, stirring occasionally, until soft and translucent.
- Add the sliced garlic, dried oregano, and chili flakes. Sauté gently for about 1 minute until fragrant, taking care not to brown the garlic.
2. Simmer and Create the Velvety Broth
- Pour in the drained cannellini beans, followed by 700ml of water and 1 teaspoon of salt.
- Bring the mixture to a gentle boil, then lower the heat to a steady simmer.
- Scoop out roughly one cup of the beans along with a splash of broth and mash them smooth with a fork (or blend briefly), then stir them back into the pot. This creates a naturally thick, creamy texture without adding dairy or starch.
- Let the stew simmer uncovered for 8 to 10 minutes to allow the flavors to meld.
3. Wilt the Greens and Finish with Zing
- Stir the shredded kale into the pot in handfuls, letting each batch wilt slightly before adding the next.
- Simmer for 4 to 5 minutes until the kale turns tender and deep green.
- Remove the pot from the heat.
- Finely grate the zest of the whole lemon directly into the stew, then squeeze in 2 tablespoons of fresh lemon juice. Stir well and season with freshly cracked black pepper and extra salt if needed.
- Ladle into warm bowls and finish with a final splash of olive oil and a twist of lemon zest.
