Preparación

1. Crisp the Chickpeas

  1. Heat a wide skillet over medium-high heat with 1 tablespoon of olive oil.
  2. Ensure the chickpeas are dry by rolling them between paper towels (this is key to getting them properly crisp). Add them to the hot pan in a single layer.
  3. Cook undisturbed for 3 to 4 minutes until they begin to turn golden. Toss and cook for another 3 minutes.
  4. Sprinkle over the cumin, dried oregano, a pinch of salt, and freshly ground black pepper. Shake the pan to coat evenly, toast the spices for 30 seconds until fragrant, then transfer the chickpeas to a small plate.

2. Blister the Tomatoes

  1. Return the same skillet to medium-high heat and drizzle in 1 tablespoon of olive oil.
  2. Drop in the whole cherry tomatoes. Let them sear without moving them for 2 minutes until the skins char and blister.
  3. Swirl the pan occasionally for another 2 to 3 minutes until they soften and begin to burst gently.
  4. Stir in the smoked paprika and remove the pan from the heat, letting the residual heat warm the spice into the pan juices.

3. Season the Yogurt Base

  1. In a medium mixing bowl, whisk together the Greek yogurt, grated garlic, 1 tablespoon of fresh lemon juice, half of the lemon zest, and 1/2 teaspoon of salt.
  2. Taste and adjust with a splash more lemon juice or salt if desired. The base should taste tangy, rich, and lightly garlicky.

4. Assemble and Serve

  1. Divide the garlic-lemon yogurt between two wide, shallow bowls. Use the back of a spoon to spread it in gentle swoops toward the edges.
  2. Spoon the warm, blistered tomatoes and their spiced pan oil over one side of the yogurt.
  3. Pile the spiced crispy chickpeas alongside the tomatoes.
  4. Arrange the cucumber half-moons and sliced olives in neat clusters around the remaining space.
  5. Finish by scattering crumbled feta, the rest of the lemon zest, and chopped fresh dill over the bowls. Drizzle the remaining tablespoon of olive oil on top, grind over black pepper, and serve immediately with warm pita or crusty bread if desired.
