Preparación
1. Cook the Lentils
- Rinse the red lentils under cold running water until the water runs mostly clear, then drain thoroughly.
- In a medium saucepan, combine the lentils with 400ml of water and 1/2 teaspoon of fine salt.
- Bring to a boil over medium-high heat, then lower the heat to a gentle simmer. Cook uncovered for 10 to 12 minutes, stirring occasionally, until the lentils are tender and have absorbed almost all the water.
- Remove from heat and spread the cooked lentils across a wide plate or shallow tray to cool down completely for about 10 minutes (a cooler mash keeps the patties firm).
2. Make the Mint-Cilantro Chutney
- Add the fresh cilantro, fresh mint leaves, roughly chopped green chili, lemon juice, 2 tablespoons of water, a pinch of sugar, and 1/4 teaspoon of fine salt to a small blender or food processor.
- Blend on high speed until completely smooth and vibrant green. Add an extra splash of cold water if needed to reach a velvety, pourable drizzle consistency. Taste and adjust seasoning with a drop more lemon juice or salt, then transfer to a small bowl and set aside.
3. Mix and Shape the Patties
- In a large mixing bowl, combine the cooled lentils, finely diced red onion, minced garlic, grated ginger, ground cumin, ground coriander, ground turmeric, garam masala, chili powder, black pepper, and the remaining 1/4 teaspoon of salt.
- Add the breadcrumbs and mash the mixture firmly with a fork or clean hands until it forms a uniform, pliable dough that holds its shape easily.
- Divide the mixture into 6 equal portions and shape each into a neat, round patty roughly 1.5 cm (about 1/2 inch) thick with smooth edges.
4. Pan-Sear the Patties
- Heat 3 tablespoons of neutral cooking oil in a wide non-stick skillet or cast-iron pan over medium heat until shimmering.
- Carefully place the patties into the pan, ensuring they are not crowded. Cook undisturbed for 4 to 5 minutes, until a deep, crisp golden-brown crust forms on the bottom.
- Gently flip the patties with a wide spatula and sear the other side for another 3 to 4 minutes until equally crisp and heated through. Transfer to a plate lined with paper towels to drain briefly.
5. Plate and Serve
- Spoon 2 generous tablespoons of the mint-cilantro chutney onto each serving plate, using the back of the spoon to sweep it across the ceramic.
- Arrange 2 to 3 warm, crispy patties across the green swoosh.
- Garnish with a few thin strands of reserved red onion and a sprig of fresh cilantro before serving immediately.
