Build the Drink
- Fill a highball glass to the brim with fresh ice cubes.
- Pour in the dry gin, dry rosé wine, pink grapefruit juice, and simple syrup.
- Top with sparkling water and give it a gentle stir with a barspoon to integrate without losing fizz.
Garnish and Serve
- Tuck a fresh pink grapefruit wheel down the inside of the glass and clap the rosemary sprig between your palms before resting it on top.

En version sans alcool
Swap the gin for a non-alcoholic botanical spirit (such as Seedlip or Gordon's 0.0%) and the rosé for an alcohol-free sparkling or still rosé wine.
