Spiced Banana and Oat Fritters

Méthode

Prepare the Batter

  1. In a medium mixing bowl, peel and thoroughly mash the ripe bananas with a fork until mostly smooth.
  2. Crack in the eggs and whisk vigorously until well incorporated with the mashed bananas.
  3. Add the rolled oats, ground cinnamon, ground cardamom (or nutmeg), baking powder, and a small pinch of salt. Stir everything together until evenly combined.
  4. Let the mixture sit for 5 to 10 minutes so the oats can absorb some moisture and thicken the batter slightly.

Cook the Fritters

  1. Heat half the oil or butter in a large non-stick skillet over medium-low heat.
  2. Spoon portions of the batter (about 2 generous tablespoons per fritter) into the pan, gently flattening each mound into a small round disk.
  3. Fry for 2 to 3 minutes until the undersides turn a rich golden brown and the edges look set.
  4. Carefully flip each fritter and cook for another 2 to 3 minutes until cooked through and nicely browned on both sides.
  5. Transfer the cooked fritters to a warm plate and repeat with the remaining batter, adding the rest of the oil or butter as needed.

Serve

  1. Stack the warm fritters onto plates.
  2. Top with a spoonful of Greek yogurt, a few fresh banana slices if desired, and a light drizzle of honey or maple syrup.
