1. Prepare the Slaw
- In a medium bowl, combine the mayonnaise, vinegar, a pinch of salt, and a pinch of black pepper.
- Add the shredded cabbage and toss well until evenly coated. Set aside in the fridge to let the flavours meld while you prepare the burgers.
2. Make the Bean Patties
- Tip the drained black beans onto a plate or into a wide mixing bowl and lightly pat dry with a paper towel.
- Mash the beans with a fork or potato masher, leaving about a quarter of them intact for texture.
- Add the breadcrumbs, egg, ground cumin, garlic powder, 1/2 teaspoon of salt, and a generous crack of black pepper. Mix thoroughly until the mixture binds together.
- Shape the mixture into two equal patties, roughly the diameter of your burger buns.
3. Pan-Fry the Burgers
- Heat the cooking oil in a non-stick frying pan over medium heat.
- Carefully place the patties into the pan and cook for 4 to 5 minutes on the first side without moving them, until deeply browned and crisp.
- Gently flip the patties and cook for another 4 to 5 minutes until crispy and heated through. Transfer to a plate.
4. Toast and Assemble
- In the same warm pan, lightly toast the cut sides of the burger buns for 1 minute until golden.
- Place a crispy black bean patty on each bottom bun, pile a generous mound of the crunchy slaw on top, cover with the top bun, and serve immediately.
