1. Prep the Skewers and Fruit

  1. If using wooden skewers on a stovetop grill pan, soak them in warm water for 10 minutes so they don't scorch.
  2. Peel, core, and cut the pears into roughly 2.5 cm (1-inch) bite-sized chunks. Toss them in a shallow bowl with the lemon juice to prevent browning.
  3. Thread 3 to 4 chunks of pear securely onto each skewer.

2. Make the Quick Caramel Dip

  1. In a small, heavy-bottomed saucepan, combine the granulated sugar and 2 tablespoons of water over medium heat. Stir once just to dissolve the sugar, then stop stirring completely.
  2. Let the mixture simmer undisturbed for 5 to 7 minutes, swirling the pan occasionally by the handle, until it turns a rich amber color.
  3. Take the pan off the heat immediately. Slowly whisk in 1 tablespoon of butter, followed by the cream (be careful, as the mixture will bubble up vigorously).
  4. Stir in the sea salt until smooth and silky. Pour into a small serving bowl and set aside to cool slightly and thicken.

3. Sear and Spice the Pears

  1. Melt the remaining 2 tablespoons of butter in a large non-stick skillet or grill pan over medium-high heat.
  2. Mix the ground cinnamon and ginger (or nutmeg) together in a small pinch bowl.
  3. Lay the pear skewers flat in the hot pan in a single layer. Sear for 2 to 3 minutes until the undersides develop deep golden-brown grill marks or caramelization.
  4. Turn the skewers over, sprinkle the spice blend evenly across all sides of the fruit, and cook for another 2 to 3 minutes until tender but still holding their shape.

4. Assemble and Serve

  1. Arrange the hot, spiced pear skewers on a serving board or platter.
  2. Place the warm caramel bowl right alongside, top the caramel with a pinch of flaky salt, and scatter the chopped nuts over the fruit if using. Serve warm for easy dipping.
