Prepare the Batter
- In a medium mixing bowl, peel and thoroughly mash the ripe bananas with a fork until mostly smooth.
- Crack in the eggs and whisk vigorously until well incorporated with the mashed bananas.
- Add the rolled oats, ground cinnamon, ground cardamom (or nutmeg), baking powder, and a small pinch of salt. Stir everything together until evenly combined.
- Let the mixture sit for 5 to 10 minutes so the oats can absorb some moisture and thicken the batter slightly.
Cook the Fritters
- Heat half the oil or butter in a large non-stick skillet over medium-low heat.
- Spoon portions of the batter (about 2 generous tablespoons per fritter) into the pan, gently flattening each mound into a small round disk.
- Fry for 2 to 3 minutes until the undersides turn a rich golden brown and the edges look set.
- Carefully flip each fritter and cook for another 2 to 3 minutes until cooked through and nicely browned on both sides.
- Transfer the cooked fritters to a warm plate and repeat with the remaining batter, adding the rest of the oil or butter as needed.
Serve
- Stack the warm fritters onto plates.
- Top with a spoonful of Greek yogurt, a few fresh banana slices if desired, and a light drizzle of honey or maple syrup.
