Bereiding

1. Cook the Lentils

  1. Rinse the red lentils under cold running water until the water runs mostly clear, then drain thoroughly.
  2. In a medium saucepan, combine the lentils with 400ml of water and 1/2 teaspoon of fine salt.
  3. Bring to a boil over medium-high heat, then lower the heat to a gentle simmer. Cook uncovered for 10 to 12 minutes, stirring occasionally, until the lentils are tender and have absorbed almost all the water.
  4. Remove from heat and spread the cooked lentils across a wide plate or shallow tray to cool down completely for about 10 minutes (a cooler mash keeps the patties firm).

2. Make the Mint-Cilantro Chutney

  1. Add the fresh cilantro, fresh mint leaves, roughly chopped green chili, lemon juice, 2 tablespoons of water, a pinch of sugar, and 1/4 teaspoon of fine salt to a small blender or food processor.
  2. Blend on high speed until completely smooth and vibrant green. Add an extra splash of cold water if needed to reach a velvety, pourable drizzle consistency. Taste and adjust seasoning with a drop more lemon juice or salt, then transfer to a small bowl and set aside.

3. Mix and Shape the Patties

  1. In a large mixing bowl, combine the cooled lentils, finely diced red onion, minced garlic, grated ginger, ground cumin, ground coriander, ground turmeric, garam masala, chili powder, black pepper, and the remaining 1/4 teaspoon of salt.
  2. Add the breadcrumbs and mash the mixture firmly with a fork or clean hands until it forms a uniform, pliable dough that holds its shape easily.
  3. Divide the mixture into 6 equal portions and shape each into a neat, round patty roughly 1.5 cm (about 1/2 inch) thick with smooth edges.

4. Pan-Sear the Patties

  1. Heat 3 tablespoons of neutral cooking oil in a wide non-stick skillet or cast-iron pan over medium heat until shimmering.
  2. Carefully place the patties into the pan, ensuring they are not crowded. Cook undisturbed for 4 to 5 minutes, until a deep, crisp golden-brown crust forms on the bottom.
  3. Gently flip the patties with a wide spatula and sear the other side for another 3 to 4 minutes until equally crisp and heated through. Transfer to a plate lined with paper towels to drain briefly.

5. Plate and Serve

  1. Spoon 2 generous tablespoons of the mint-cilantro chutney onto each serving plate, using the back of the spoon to sweep it across the ceramic.
  2. Arrange 2 to 3 warm, crispy patties across the green swoosh.
  3. Garnish with a few thin strands of reserved red onion and a sprig of fresh cilantro before serving immediately.
