Bereiding

1. Toast the Walnuts

  1. Place a small, dry skillet over medium heat.
  2. Add the chopped walnuts and toast, swirling frequently, until fragrant and lightly golden, about 2 to 3 minutes. Immediately transfer them to a small dish to stop the cooking.

2. Caramelize the Figs

  1. Return the skillet to medium heat and melt the butter.
  2. Stir in the sugar, a pinch of cinnamon, and a tiny pinch of salt until the sugar begins to dissolve into the butter.
  3. Place the fig quarters into the pan, cut-side down. Let them sear undisturbed for 2 minutes until lightly caramelized around the edges.
  4. Pour in the fresh orange juice. Lower the heat to medium-low and gently simmer for 3 to 4 minutes, turning the figs once, until the fruit softens and the juices reduce into a glossy, fragrant syrup. Remove from the heat and set aside to cool slightly.

3. Whip the Quark Cream

  1. In a mixing bowl, combine the quark, honey, vanilla extract, and half of the fresh orange zest.
  2. Whisk vigorously for about 1 minute until the mixture turns smooth, light, and spreadable. Taste and add a drop more honey if your quark is especially tangy.

4. Assemble and Serve

  1. Spoon half of the whipped quark cream evenly between two wide glasses or dessert bowls.
  2. Spoon half of the warm fig syrup over the cream layer.
  3. Divide the remaining quark cream over the top, smoothing it gently with the back of a spoon.
  4. Arrange the caramelized fig pieces on top of each cup, drizzle with the remaining syrup from the skillet, and scatter over the toasted walnuts and remaining orange zest. Serve immediately while the fruit is warm and the cream is cool.
