Prepare the Oat Crumble
- Preheat your oven to 180°C (160°C fan).
- In a medium bowl, combine the rolled oats, plain flour, chopped pecans, brown sugar, a pinch of cinnamon, and fine sea salt.
- Pour in the 3 tablespoons of melted coconut oil (or dairy-free butter) and stir thoroughly until the mixture forms coarse, clumpy crumbs.
- Spread the crumble mixture evenly onto a parchment-lined baking sheet.
- Bake for 12 to 15 minutes, stirring once halfway through, until crisp and golden brown. Remove from the oven and let cool slightly to crisp up.
Cook the Spiced Apples
- While the crumble is in the oven, heat a large non-stick skillet or frying pan over medium heat with 2 tablespoons of melted coconut oil.
- Add the apple slices to the pan and toss to coat in the oil.
- Sprinkle with 1 teaspoon ground cinnamon, ground nutmeg, ground cardamom, and lemon juice. Drizzle over the maple syrup.
- Cook, stirring occasionally, for about 8 to 10 minutes until the apples begin to soften and turn golden around the edges.
- Pour in 2 tablespoons of water, reduce the heat to low, and cook for another 2 to 3 minutes until the apples are tender but still hold their shape and are coated in a glossy spiced syrup.
Assemble and Serve
- Divide the warm spiced apples and their pan syrup among shallow dessert bowls.
- Scatter the crunchy toasted oat crumble generously over the top.
- Serve immediately, optionally alongside dairy-free vanilla ice cream or a dollop of coconut yogurt.
