40ml London dry gin
3 thick slices fresh cucumber
4 fresh mint leaves

20ml freshly squeezed lime juice
15ml simple sugar syrup (1:1)
100ml sparkling water
Handful of ice cubes

Como se faz

1. Muddle the Base

Drop the cucumber slices, mint leaves, and simple syrup directly into the highball glass.
Gently press with the back of a spoon or a muddler just enough to release the fresh aromas and cucumber juice without pulverizing the mint.

2. Build and Stir

Pour in the fresh lime juice and gin.
Fill the glass generously with ice cubes.
Top with sparkling water and stir gently from the bottom up to combine while keeping the effervescence intact.

Decoração

A long cucumber ribbon tucked inside the glass and a slapped sprig of fresh mint resting on top.

Versão sem álcool

Swap the 40ml gin for 40ml of a distilled non-alcoholic botanical spirit (such as Seedlip Spice 94 or Gordon's 0.0%), or simply top with extra sparkling water for a botanical soda.
