Hearty Tuscan White Bean and Kale Stew

Preparação

1. Build the Aromatic Base

  1. Heat the olive oil in a wide, heavy-bottomed pot or Dutch oven over medium heat.
  2. Add the diced onion with a pinch of salt and cook for 5 to 6 minutes, stirring occasionally, until soft and translucent.
  3. Add the sliced garlic, dried oregano, and chili flakes. Sauté gently for about 1 minute until fragrant, taking care not to brown the garlic.

2. Simmer and Create the Velvety Broth

  1. Pour in the drained cannellini beans, followed by 700ml of water and 1 teaspoon of salt.
  2. Bring the mixture to a gentle boil, then lower the heat to a steady simmer.
  3. Scoop out roughly one cup of the beans along with a splash of broth and mash them smooth with a fork (or blend briefly), then stir them back into the pot. This creates a naturally thick, creamy texture without adding dairy or starch.
  4. Let the stew simmer uncovered for 8 to 10 minutes to allow the flavors to meld.

3. Wilt the Greens and Finish with Zing

  1. Stir the shredded kale into the pot in handfuls, letting each batch wilt slightly before adding the next.
  2. Simmer for 4 to 5 minutes until the kale turns tender and deep green.
  3. Remove the pot from the heat.
  4. Finely grate the zest of the whole lemon directly into the stew, then squeeze in 2 tablespoons of fresh lemon juice. Stir well and season with freshly cracked black pepper and extra salt if needed.
  5. Ladle into warm bowls and finish with a final splash of olive oil and a twist of lemon zest.
